Sweet whole chicken!
As salaamu alay kum,
1 whole chicken
1 large green pepper sliced in strips then those cut in half
2 medium to large onions sliced in strips
5 large cloves of garlic not cut up at all
3 small bay leaves
1/2 cup of plain tomato sauce
1/8 cup vegetable oil ( I think that's 2 tbls)
salt and pepper to taste
3/4 tsp of cumin powder
3/4 tsp of coriander powder
3/4 tsp of cinnamon powder
In a high side backing dish add all of the above ingredients (except the chicken) in the dish and mix everything together well. Then put the whole chicken in the middle of the veggies in the baking dish make sure there are no veggies under the chicken but all around it evenly. Then rub the veggies all over the chicken as to get some of the sauce and oil on the chicken. Then stuff the chicken with the veggies but don't put any of the bay leaves or garlic in it. Now take 2 new whole cloves of garlic and 1 bay leave (not the ones that are already in the mixed veggies) and stuff those in the chicken with some of the veggie mix.
Get a small bowl to make another spice mix to rub (more like pat all over the whole chicken as to make it stick better).
1 tsp of cinnamon powder
1/2 tsp of coriander powder
1/2 tsp of cumin powder
1/2 tsp of salt
1/2 tsp of pepper
After you finish putting the spices all over the chicken take 2 cups of water and pour it in the dish on the sides (not all over the veggies and chicken so that it doesn't take all the spice off everything). Cover with tin foil and place in a preheated 350 degree oven for 2 hours and 15 minutes. Then removes the foil and base the chicken with the juices from the pan (it will look like to much water but it will go away after it's done cooking). Now place back in the oven without the foil on it and cook for another 1 hour and 25 minutes. This has a lot of flavor so I would serve with a plain rice not something with lots of spices and things it will be to much I think.
Note: I put a few onion slices under the string on the chicken, peel them off before eating it they taste burned but that dose not give a burned taste tot he chicken at all it will give the chicken more good flavour. Also the chicken its self may look burned but it is not at all its just the spices that have darkened. This tastes so amazing I ate a lot of it, it was hard to stop eating it.
