chicken stew (kuwaiti)
Salam Alaikum
well can't remember what this dish is called, but it's a kuwaiti dish (i assume as dh is from there lol). This one is a really tasty dish, MashaAllah and my kids just LOVE it
oil
1 chicken cut in 6-8 pieces
2 onion, chopped
1 can chopped tomatoes, or 3 fresh tomatoes, chopped
2-3 potatoes, cut into 4 pieces
1-2 carrots cut into slices
4 cloves garlic, crushed
1½ tsp ground coriander or some fresh coriander
ca 1 L water
1 tsp turmeric
1/2 tsp cinnamon
2-3 whole cardamom
2 dry lime
2 tblsp tomato purée
1 tsp black pepper
1 maggi chicken cube
salt to taste
Add some oil in a large pan, when it´s hot, add the onion and fry until transparent. Then add the chicken and fry it until golden on both sides. Add chopped tomatoes, mix and let simmer for a few mins.. then cover the chicken with water, add the spices and let simmer for a few mins more.. then add tomato puree, vegetables and lime and let simmer for about 5 mins.. Then add maggi cube, garlic and perhaps a bit more water.. just be careful not to put too much water, as the chicken gives a good amount of liquid aswell.. leave to cook (covered) for about 45 mins and voila there u have it!
serve with basmati rice, or with arabic bread

that sounds tasty but may I please ask what is maggi chicken cube? Cooking is not my strength as you can see

Wa alaikum salam sister Munaqaba08 maggi chicken cube is a brand of halal chicken stock cubes used a lot in Middle Eastern cooking.
