1 teaspoon baking powder (omit this if using self-raising flour)
1 Teaspoon lemon zest
1 Tablespoon Milk
1: Preheat the oven to 180C (gas mark 4). Grease a loaf tin.
2: Cream the butter and sugar together until pale and fluffy.
3: Beat in the eggs - one at a time.
4: Add lemon zest.
5: Sift in the flour gradually and fold in a figure of 8.
6: Add enough milk to make a dropping consistency.
7: Place the mixture into the prepared tin and smooth the surface.
8: Bake on the middle shelf of the oven for 40-50 minutes or until when tested with a knife it comes out clean.
9: Allow the cake to cool down a little before removing from the tin.
10: Remove the cake from the tin and place onto a wire rack to cool completely before slicing and serving.
