Families Fav. Apple Pie
This is an apple pie that my family loves alhamdulillah. Each time I make it, it comes out great alhamdulillah. Maybe the recipe is hard to mess up? Don't know where I got the recipe but here it is:
Best Ever Apple Pie
Pastry:
3/4 cups shortning
3 tsp butter, softened
2 1/4 cups all purpose flour
3/4 tsp salt
1/2 cup ice water
Filling:
8 cups thinly sliced peeled tart apples
2 tbsp lemon juice
1/2 cup granulated sugar
3 tbsp all purpose flour
1/2 tsp cinnamon
Glaze:
1 egg yolk
2 tsp granulated sugar
Directions:
1/ Preheat oven to 425 degrees (220 degrees C)
2/ In a bowl, beat shortening with butter until smooth; stir in flour and salt until course and ragged looking
3/ Pour in water all at once; stir until loose dough forms
4/ With floured hands, press into 2 balls
5/ On well-floured surface, gently press each into 3/4 inch (2 cm) thick disc.
6/ Wrap and put in fridge for at least 1 hour or until chilled
7/ On well-floured surface, roll out 1 of the pastry discs into 13-inch (33 cm) circle
8/ Fit into 9-inch (23 cm) pie pan; trim edge even with the pan
Filling:
1/ In large bowl, toss apples with lemon juice
2/ Stir together sugar, flour, and cinnamon; sprinkle over apples and toss until coated
3/ Scrape into pie shell
4/ Brush pastry rim with water
5/ Roll out remaining pastry to same size circle (i.e. 13-inch/33 cm)
6/ Drape over apples; trim, leaving 3/4 inch (2cm) overhang
7/ Fold overhang under bottom pastry rim; seal and flute edge (use forefinger or fork insha'Allah)
8/ Cut steam vents in centre (I like to make little designs likes flower petals, vines, etc.)
Glaze:
1/ Whisk yolk with 1 tablespoon (15 ml) water; brush over top of pie
2/ Sprinkle top of pie with sugar
3/ Bake in bottom third of oven for 15 minutes (watch this b/c my oven will burn the edges if I leave it in for 15 minutes, so check to make sure this doesn't happen insha'Allah. It should be a nice golden brown insha'Allah)
4/ Reduce heat to 350 degrees (180 degrees C) for 40 minutes or until golden, filling is bubbly and apples are soft when pierced with knife through one of the vents. Let pie cool on cooling rack.
