Raisin, apple, cinnamon muffins
these muffins are perfect for breakfast!!!!!!!
ingredients
150g plain flour
150g stoneground wholemeal bread flour
1 tablespoon baking powder
75g caster sugar
1 teaspoon ground cinnamon
1 large egg, beaten
300ml milk
2 teaspoons lemon juice
6 tablespoons melted butter
100g raisins
2 apples, peeled, cored and roughly diced into 5mm
method
Preheat the oven to 200°C,400°F, Gas Mark 6. Line a 12 hole deep muffin tray with muffin cases.
Combine together the flours, baking powder, caster sugar and cinnamon in a bowl.
In a jug mix together the egg, milk, lemon juice and oil.
Make a well in the centre of the flour and add the liquid along with the raisin and apple mix until almost combined. The mixture should still look rough, over mixing will cause the muffins to be tough in texture.
Spoon the mixture into the prepared tin to 2/3 fill each muffin case. Place in the oven and cook for 20-25 minutes until the muffins are golden and firm with a cracked effect on the surface.

Jazaka'Allah khair sounds like a great combination I have muffins similar to this using a few different ingredients though.
