Shorabat Koosa wa Laban (Zucchini Soup with cooked Joghurt)
Assalamu alaikum,
Shorabat Koosa wa Laban (Zucchini Soup with cooked Joghurt)
Ingredients:
2 pieces of Zucchini
1 large onion
some garlic (3-5 cloves)
500 ml Yoghurt
1 egg
some flour
instant broth
some oil
salt and pepper
Preparation:
1. Cut zucchini in small pieces - as you like - i usually cut it once lengthwise and then into slices of about 0.5 cm. Then chop onion.
2. Put onion and some oil into a pot and fry i lightly, then add zucchini. After roasting gently put 1l water, pepper, salt and instant broth as much as you like. Maybe you want to put some nutmeg, too. Let it cook on lower heat.
3. Now take a second pot and put in the yoghurt and mix it with the egg and 1 tbs flour. Take about 1 1/2 cup of the hot broth, put it into this mixture, and stir it well. Now you have to heat it slowly while you stir it regularly. Pay attention to stir it very good - there shouldn't be clumps in the bottom of your pot. When it's hot, it should cook for 5-7 minutes on lower heat. Don't let it become clumpy - if this happens, you should mix some water and flour and put it in the soup - inshallah this will help.
4. Now you put the cooked yoghurt into your soup and let it cook a little bit while you prepare the last step.
5. Cut the garlic in very very small pieces and fry it in some oil until it's golden brown - now put this (with the oil - if you didn't take too much) into your soup and leave it for 2 or 3 minutes on lower heat.. The zucchini should be cooked now. And then: Enjoy!!!
PS: That's my first recipe - so don't be harsh inshallah :P and English is not my native language (I'm german) as you probably noticed - so, if you didn't understand anything let me know. If i make special mistakes over and over again, please tell me. I'd love to improve my language skills!!
