Asalamu alaikum

hope you enjoy this pumpkin soup!

1 T butter
1 onion- finely sliced
3 cloves garlic
1 kg pumpkin - cut
2 c coconut milk
3 c vege/chicken stock
2 T moroccan spice (any thing nice to give it some oomph!)
salt and pepper

Heat butter, cook garlic and onion slowly. Add pumpkin, put lid on and let sweat.
Add vege stock and rest of ingredients. Simmer for 15 mins until pumpkin is cooked. Put all ingredients into food processor and wizz until smooth. Reheat. Serve.
