Libyan Ca'ak maalah (salt/savoury biscuits) with pics
These are savoury bread-like pastry sticks sprinkled with Sesame Seeds that are famous in Libya and are served with shay arabiy (tea).
My first attempt at cooking caak milha.
Ingredients:
1 cup warm milk
1 cup soft butter or margarine
1 cup of blossom water (orange blossom water / mayat zahar /rose-water)
little salt
1 teaspoon dried yeast (dissolve in a little of the milk)
Approx 7 - 8 cups Flour (self-raising or add a teaspoon of baking powder to plain flour)

Mix all of the ingredients except the flour then add enough flour as required to form a soft dough.
Divide the whole amount of dough into 4 equal pieces and each piece of dough is divided again into convenient sizes to roll into a sausage shape, then cut into smaller pieces smaller than a walnut dividing equally.
Take a piece of the cut dough and roll it evenly under your hands until it is approx 8 inches long:
Loop in half :
Then twist to form a kind of plait:
To decorate: brush with milk or egg and sprinkle with sesame seeds
Cook until golden at approx 200 degrees centigrade.
Serve with Shay Arabiy (Arabic tea)

MashaAllah great alhamdulilah - I am so happy that it turned out well. Mine didn't turn out as light as I expected but I saw the lady who told me the recipe and she will phone me after checking her cookbook - it could be that the recipe is slightly different to what she could remember - maybe less blossom water.

Oooooh this is the EXACT recipe I was looking for on Islamway. I got a recipe to make them but they didn't come out quite right. This recipe is totally different and they look exactly like the ones I was asking about.
I will definately try these soon insha Allah.

Wa jazakiAllahu khairan dear sister. I was going to let you know that i have posted this recipe.
Instead of a whole cup of blossom water - try 1/2 cup only and 1/2 cup of vegetable oil.

I tried it! I made half a batch to see how it goes first. They were great masha Allah! I made me a cup of mint tea and enjoyed it peacefully with these all alone. My idea of Me-Time WELL SPENT :pinkteacup:
Next time insha Allah I will add more flour (I didn't measure today) so it can come out more crisp. Mine came out a bit soft on the inside.

Just wanted to add the girls had fun 'making' them with me.. theirs came out like circles masha Allah, but they didn't taste them yet as I baked them after they slept. Tomorrow insha Allah!

MashaAllah I am very happy that you tried the recipe and had lots of fun in the process, wa feeki barakAllah.
Did you try the recipe with less blossom-water and some oil too? It sounds like the way mine turned out. Actually I think that more flour would make them hard but more butter or oil would make them crumblier (think of Ghoriba or biscuits which are very crumbly because of the high fat content )
