Corn Flakes Fingers (Libyan sweets)
Assalamu aliakum,
These are REALLY good masha Allah. They are a lot of effort, but masha Allah in the end you have a big quantity and well worth it
Ingredients:
1 c veg oil
1 c margarine
1/2 c icing sugar
2 eggs
1 tbsp baking powder
1 tsp vanilla extract
1 c custard (actual ready custard--see below)
1/2 cup cornstarch
flour enough for dough to hold (approx. 2 1/2 - 3 cups)
500-600 g white chocolate
500 g of corn flakes
Method:
1. Prepare the custard first and allow it to cool. Mix 1 cup milk, 2 tbsps sugar, vanilla, 1 tbsp cornstartchin a pot until it boils and becomes thick. When it does add 1 egg yolk while stirring. Let it cool to room temperature.
2. Mix the veg. oil, margarine, icing sugar, eggs, baking powder, vanilla, custard, and corn starch together.
3. Mix in flour. Add enough that the dough holds together and is easily formed.
4. Roll out dough into long thin strips, then cut it up into fingers the size of your pinky.
5. Bake at 350F until they become golden brown.
6. Melt white chocolate (don't melt it all at once, melt it by portions) in a bowl & in a separate bowl put lots of finely crushed corn flakes.
7. Dip fingers into white chocolate (make sure they're fully covered), then dip them into the corn flakes (again make sure they're fully covered).
8. Allow them to sit so chocolate can re-form.
9. Enjoy! You will forget the effort it took with the first bite
