Lentil Soup (healthy - no frying)
Ingredients:
1 cup of Red lentils
2-4 fresh tomatoes
1 carrot or 1 potato
1 onion
A sprinkling of vegetable oil
Salt and pepper to taste
Boil together for up to 1 hour or until cooked, then puree in an electric blender or work through a sieve

I make red lentil soup very oftem because it's like you said healthy, quick (!!) surprinsingly good and very cheap, sometimes i add leftovers from chicken and in winter i take tomato past instead of fresh tomatoes.
For serving i let melt in a pan about a tablespoon of butter with some chopped dried mint, sprinkle it over each soupdish and serve it with a lemonquarter.(Vitamin C helps assimilate better the iron from the lentils.)
Sometimes i like to serve it with a little pinch of red hot pepper.

looking in my fridge today i saw a pumpkim and this reminded me to tell you that the orange pumkin goes very welll with the redlentil soup too, it is the favorite dish of my fil, i serve him that how much i can when he comes to see us.
Just add the pumpkin cuttet in big pieces to the other ingedients of the soup and let cook until lentils are tneder and mix just as sister Aisha explained.
