Mahallabiyah (Traditional Ground Rice Pudding) Empty Mahallabiyah (Traditional Ground Rice Pudding)

salaam

Rice pudding especially for Suhoor (late night) or for whenever you are craving a sweet milky pudding:

5 Tablespoons Ground Rice
6 Tablespoons Nido (or other milk powder)
6 tablespoons Sugar
6 cups water
Vanilla sugar or rosewater or orange-blossom water to flavour
Ground nuts or cinnamon to decorate

This can be prepared for single servings in dessert dishes - particularly for guests or in one large dish if you are short of time.

Sieve the ground rice into a bowl and add 2 cups of water - whisking to remove any lumps. Put the rest of the water on to boil and add the milk powder, sugar and flavouring.
When it is boiling add the rice mixture and stir while you bring it back to the boil. Let it boil for a few more minutes (3-4 mins) still stirring to prevent lumps forming.
If using glass dishes the saucepan may be placed in cold water to cool slightly (keep stirring from time to time).
Ladle into dishes and decorate.

Will keep very well for up to 2 days in a refrigerator.

Machallah I love muhallebi. I never used milk powder before as I just use milk but I am tastes great either way!

I give my children this, also assida almost daily for breakfast!
