~* Libyan Recipe - Bazeen *~, Traditional Libyan Dish made from Ground Barley

As-salaamu alaikum

~*Bazeen*~

Ingredients :

3-4 cups of Barley Flour (Ground Barley)
pinch of Salt
enough Water to make a dough (add water a little at a time and knead into a dough as in making bread)

Form dough into 4 balls and boil in plenty of water for 20 minutes approx.
Remove dough balls from saucepan and knead with the dough hooks of a cake-mixer / food processor to break up the balls before kneading them by hand - be careful as it is very hot and you need to work quickly to form into one large ball. (It is normal for your hands to get quite red (Or you could do this part the traditional way, if you don't have dough hooks, which uses a large wooden 'paddle-like' utensil called a m3aSada which is also used in another dough recipe called 3ASeedah but this is a thicker dough and quite hard work.) At this stage the Bazeen is ready to be placed in the serving dish to be covered with the already prepared tabiekha (sauce /stew).

Tabiekhat Batata :
Make the tabiekha with as many pieces of lamb that you need.
Strain out the onions before adding the potatoes after the meat is cooked.
Arrange the meat and potatoes around the bazeen and pour over the sauce. you can also add some hard-boiled eggs to the arrangement if you like.
Serve with a plate of Green chilli peppers and lemon wedges.
Traditionally eaten by hand - really the only way to eat it though I've seen some ladies eat it with spoons - each mouthful of dough has to be squashed/blended well into the sauce (eating only from the area of the dish directly in front of you of course) otherwise it is not very easily digested!

The full tabiekha recipe is the same as for the Libyan macaroona,which i will copy and paste here for the quantities inshaAllah.

(basic Libyan tabiekha)

1 onion (chopped)
2-3 cloves of garlic (preesed)
2 tomatoes (chopped or liquidised) small can of tomatoes
1-2 tablespoons Tomato paste/puree according to taste
3 tablespoons of oil for frying (olive oil or vegetable oil)
1 kg Meat (lamb, goat, camel cut into pieces / chops) or 1kg Chicken (cut into 6-8 pieces)
1 teaspoon red chilli pepper powder (or sweet paprika if preferred)
1/2 - 1 teaspoon turmeric
1 teaspoon baharaat / hararaat
a few pinches of ground black pepper
approx 1 teaspoon of salt
2 fresh green chillies

In a medium sized saucepan (approx 6 litres):

Fry onion and garlic in the oil till golden.
Add the meat and brown.
Add the spices, salt and fry a little longer.
Add tomato paste and fry a little longer .
Add the fresh tomatoes and chilli peppers and enough water to well cover the meat. Boil until the meat is cooked then remove the meat from the sauce to brown in the oven or under the grill.
(for the Bazeen recipe the meat remains in the sauce and is not browned in the oven)
