(Algerian) Garantita - a sure hit!
Assalamou aleikoum wa rhamatoullah wa barakatou
Garantita (also pronounced Grentita in some parts of Algeria) is a favourite dish of mine , and also, I do not know many Algerians who do not like (ok, you always have exceptions ,LOL) so your Garantita dish is going to be a sure hit Inshallah.
You need to have an oven tray large to accommodate a litre and half of liquid . Garantita does not like a deep dish, it is better cooked in a shallow tray
I will give you the quantitities for 4 people but you can easily double the quantities exactly, it will not make a difference.
You need :
250 grams of chick peas flour
100 ml of oil
1 egg
salt, pepper, cumin
1 & half litre of hot/lukewarm water
4 x individual french bread
Method:
While you are preparing garantita, preheat oven at mark 200 C.
Put all your ingredients in a bowl, add the water. With an electric whisk, preferably, mix to the consistency of a smooth batter, a little foamy on top, but this is normal. Leave it to rest for a few minutes and pour in your oven tray.
Cook in the oven for about 35 minutes , until the top is golden brown - you will find that the inside is still smooth, but it is ok, cook for another 7 minutes if it is.
it will still be soft in the center but this is garantita.
Some people make garantita very soft, but in my family and many other I know, we like it firmer, so, keep to the cooking guidelines I have put here. As the garantita cools down, it will get firmer too.
To serve:
when you take the garantita out of the oven, wait until it cools down a bit, in the meantime, heat the french bread, then cut it in the middle and put some garantita in the middle, as a filling. Some people add harissa (yummy)! serve also with a green salad on the side.
et voila.
the following are not my photos, I took them from recipeazaar. As soon as I have mine, I will replace them Inshallah.
At home, our garantita is a little browner though (but not burned LOL).
from this pic, you can see that the garantita is not very thick.
By the way, there are many variante of garantita, but I can say that mine is best Mashallah !!!!! (of course)
