Libyan Recipe ~* Fasooliya bil Kersha *~

Tripe with white kidney beans

Tripe (as much as you like!) cleaned and cut into spoon-sized pieces (or how you prefer)
½ Kg Dried white beans (White Kidney beans, black-eyed beans) –soaked overnight then rinsed
Onion - cut in half vertically then sliced into strips
Garlic - sliced or chopped
little oil

The Tripe (after a thorough cleaning) is cut up into spoon-sized pieces and boiled with the beans and some sliced Onions and some chopped Garlic (helps disguise the 'odour' of the Tripe ) for approx 2 hours or until the Beans and Tripe are soft.
Remove any scum that collects on the surface with a slotted spoon Pouring a little oil helps prevent it frothing up and boiling over.

Then the Tomato sauce is prepared then stirred into the Tripe and Beans –

Tomato sauce (Tabiekha)

Fry some more Garlic & Onion (chopped) in Olive Oil and some chopped Tomatoes and continue frying a little & 1 Tablespoon Tomato Puree, 1/2 -1 Teaspoon Baharaat, 1/2 -1 Teaspoon Ground Red Pepper, 1/2 - 1 Teaspoon Turmeric, pinch of Cumin.

Towards the end of the cooking time stir in some freshly-chopped coriander leaves.
Traditionally served with bread and eaten by hand- but can be served with rice as a type of ‘Curry’.

NOTE
As the sauce thickens the beans are likely to stick to the bottom of the pan so take care to stir often

For cleaning the tripe (straight from the sheep):

Assuming that it has already been washed after removal of the stomach contents - dip the tripe in very hot, almost boiling water (if you have a metal tongs this will be very useful). Do not soak the tripe longer than a second or two at first as the tripe will shrink and not be supple.

Scrape well with a sharp knife, working your way over the tripe (on the furry-looking side ) rinse from time to time. You can rub a few handfuls of salt into the tripe too and also add a little vingar or lemon-juice to the water.

Sometimes tripe is very white but is often pink and sometimes slightly blotchy.

This stage can be pre-cooked and frozen to be used when required:

Tripe is the edible offal from the stomach of animals like sheep, cows, goats etc. Some say it is the stomach lining.

I cook tripe a lot Alhamdulillah, although I still don't eat it.

Yes I know you told me to try it sister Aisha but I haven't yet. Wink

Recently I have been substituting canned white kidney beans in tomato sauce instead of using the white kidney beans, and it still comes out nice .. I mean my husband still enjoys it.mashaAllah
