Fresh lentil salad

1/2 cup cooked brown lentils
1 cup cooked frozen peas

Put these in the fridge to cool for a while.

1 tbls of oil of your choice heated in a pan.
2 small onions
Cook them as much as you like then add 3 cloves of garlic sliced (or more lots is yummy), 1/4 tsp hot pepper flacks, 1/4 tsp dry parsley (or some fresh but I would not cook it but just add when the salad is put together)  and salt and pepper to taste.

2 tomato's sliced

Add all of the ingredients to a large bowl and mix well. I just add some Italian salad dressing to this as much as I feel it needs.

There are so many things that could be added to this such as cucumber, feta cheese, red pepper boiled eggs ext...
Also you could use pasta or whatever you like instead of lentils maybe quinoa or black rice.
Also instead of using Italian dressing you could use olive oil, lemon or lime juice, vinegar and some more salt and pepper maybe some balsamic vinegar.
