Ajja - Libyan Omellette
'Ajja
This is like a very spicy omellette.
Basically you have an assortment of vegetables chopped up and fried (potato and carrot if used should be boiled first) and some minced meat or chicken, onion is essential of course.
While frying add the spices - I would suggest the mixed spices( baharaat/hararaat) or Garam Masala and some red Chilli powder(or paprika if you don't want it too harr) and black pepper, a little Cumin, and salt to taste.
After frying the vegetables put into a tajine or baking tin with the chopped, cooked meat or chicken. Add enough batter to soak into the vegetables which will bind it all together in the process of cooking (or add the batter to the mixed fried vegetables and combine them in a bowl before putting the mix into the baking tin or tajine).
Cook in a moderately hot oven 180C -200C until egg sets and becomes slightly golden.
Batter - depending on the quantity of veg. mixture 5/6 eggs and approx. 2 -3 tablespoons Flour with a teaspoon of baking powder added - beaten thoroughly, salt and pepper.
Onion - chopped into small pieces
Green Onion -chopped
Tomato
Zucchini (courgettes)
Potato (boiled)
Carrot (boiled)
Aubergine
Peas
Minced meat/ chicken (pre-cooked leftovers or if you are using fresh meat boil in water with some salt and pepper and a few garlic cloves. Minced meat can be formed into flattened kefta or sausage shapes before boiling then sliced after cooking)
Sweet green pepper (capsicum)
Fresh green chili pepper or red if you like it very spicy hot! (but don't forget it's already spicy hot from the spices)
These are just suggestions, you can choose any combination of vegetables and even leave out the meat if you prefer. Basically it's a very useful recipe for using up the last of your veg!
