Mutton with Roti/Chapati Empty Mutton with Roti/Chapati

As Salamu Alaikum wa Rahmatullahi wa Barakatuhu

This is not the Thareed recipe that sister Aisha mentioned but I make this dish quite often with leftover Roti/Chapati. One can also use Arabian bread. This bread toaster-gone-crazy which we have for breakfast is not suitable for this recipe.

Ingredients.

Mutton with bones about 600 grams
2 tablespoons oil or ghee (butter)
½ teaspoon Turmeric Powder
½ teaspoon Coriander Powder
¼ teaspoon Cumin Powder
¼ teaspoon Black Pepper Powder
Salt according to taste
1 level tablespoon garlic and ginger paste
1 medium size onion finely sliced
1 medium size tomato finely sliced
2 or 3 green chilies split in the center. (If the chili is too strong I remove some of the pits.)
3-4 cups of bread broken into bite size pieces.

Method: One – my method.

1. Add all the ingredients together in a pot and mix well, except the bread.
2. Cook on medium to low heat, stirring often, letting it cook in its own juices.
3. Add water if necessary, until the meat is cooked and there is a nice gravy from the onions and tomatoes.
4. Add the bread, and mix well.
5. Slowly add 1-2 cups of water stirring all the time, just enough to cover the bread.
6. Let the bread cook; it normally takes about 6 to 8 minutes. Remember to stir from time to time to prevent the bread from sticking to the bottomof the pot.
7. Adjust the quantity of the water according the amount of bread. The consistency should not be too dry or watery, sort of in between.

Garnish with finely chopped Mint and Coriander leaves. You can also sprinkle some Gharum Masala (mixed spice powder) before adding the Garnish.

Serve with pickles and chutneys.

I normally add a bit of lemon juice before eating.

Method: Two –my Mil’s method

1. Braise the onions till a nice pinkish color.
2. Add the meat and spices and let it cook adding water till the meat is tender.
3. Add the tomatoes and cook it well.
4. The rest from step 4 is the same.
5. My Mil uses Red chillie powder which I don't and makes hers more spicy.
