Nettle Soup
Oh yeah, that stinging nasty stuff is INCREDIBLY good for you! Who knew? And, it doesn't sting once it's cooked, by the way!
Here is my own version of Nettle Soup - it's sooooo good. My 4-year-old calls it "that-one-that's-my-favorite green soup"!
1 med. onion, sliced
4 TBS butter
3 Leeks (or 5-6 baby leeks) cleaned and sliced (white AND green parts)
4 medium potatoes, peeled and cubed
3 quarts good quality chicken stock
1 bunch of nettle leaves, washed, large stems removed and roughly chopped
Seriously,this is so easy:
1. Saute onion, leek, potatoes in butter about 5 minutes over medium heat. Just until the onions are soft.
2. Add the stock and the nettle leaves
3. Simmer until everything is tender, adding salt and pepper to taste
4. Blend in batches in blender or in the pot with a hand blender until smooth.
**Handle nettles with care while washing and chopping! Wear rubber gloves, or touch only with tongs and knife!

Nettles are not among my favorites, maybe I should give it a try since it is one of your daughter's favs.

Subhana'Allah, I knew that nettles were good for certain allergies but I was not aware that they taste good. Jazakillahu Khayr for sharing dear sis. I think I really want to try this insha'Allah.
