Fatet Betenjan
A friend sent this recipe to me and I plan to try it soon insha'Allah...sounds good.
Fatet Betenjan
What you'll need:
1 large eggplant
1 tub of plain yogurt
2-3 cloves of garlic
1/2 lb of ground beef
2-3 pita bread
Peel eggplant and slice it. Sprinkle salt on it to get some of the water out (eggplants are like sponges and soak up oil), let it sit there for at least 1/2 hr. In the meantime, crush the garlic, add to the yogurt, and add salt to your liking to the yogurt as well, stir really well. Leave it out so it gets to rm temperature. Now fry the eggplant slices til golden brown. Drain on paper towel and put aside. Cut up the pita bread into small squares and fry in veg oil. Drain on paper towel. Fry the ground beef til done, season with salt & pepper.
Note: The assembly of this dish should only be done when ready to eat, do not assemble in advance.
Assembly:
Layer bottom of a pyrex dish with fried eggplant. Next layer is the fried pita, spreading evenly across dish. Spread the garlic yogurt evenly over entire dish and then garnish with the fried ground beef. You can also fry peeled almonds and garnish the top of this dish with that.
