Frikkadels (Mince Balls)
With Ramadan just a day or two away, here’s one of my favorite savory for Ramadan.
Frikkadels
Ingredients:
500g Mince (mutton is better but you can use chicken if you prefer)
6 Slices Bread – the type we normally toast.
½ tablespoon Ground Garlic
1 medium grated Onion
2 teaspoons Baking Powder
2-3 teaspoons pounded green Chillies
Salt to taste
¼ teaspoon Crush Pepper
¼ teaspoon Crush Jeera
3 Eggs separate the yolks from the white.
¼ cup chopped Parsley and some lemon slices for garnishing.
Method:
Squeeze out all the moisture from the mince and onions. Add all the other ingredients except the parsley, lemons and white of the eggs. Make into finger-shaped balls flatten slightly. Place on baking tray. Brush with whisked egg white and pour ½ tablespoon of oil on each ball. Bake at 150°C for 30 minutes. If necessary add more oil till cooked….a nice brown color. Garnish with parsley and lemon slices.
Alternative method:
Dip the friddakels in the whisked egg white and deep fry over medium heat till nice brown in color. Garnish with parsley and lemon slices.
Yummy with mashed potatoes and tomato chutney.
