Lemon-Cilantro kofta Empty Lemon-Cilantro kofta

salaam


Lemon-Cilantro kofta

1 tablespoon olive oil
1 tablespoon butter
1/2 onion, diced
3 garlic cloves, smashed
1 red chili, seeded and sliced
2 teaspoons turmeric, ground
1/4 cup fresh cilantro, chopped
Juice of 1 lemon
1 lemon, cut into 4 slices
2 tablespoons fresh mint, chopped
1-1/4 cups water

Kofta:

1 pound ground beef
1/2 onion, finely diced
1/4 cup fresh parsley, chopped
1 teaspoon cinnamon, ground
1 teaspoon cumin
1teaspoon coriander
1 teaspoon paprika
1 teaspoon salt
1 teaspoon pepper
1/2 cup oats
1 egg

1. Pre-heat oven to 400 F. Meanwhile in a large mixing bowl add beef, onion, parsley, cinnamon, cumin, coriander, paprika, salt, pepper, egg and oats. With hands mix well. Form into walnut size balls, place on plate and place in refrigerator until needed.

2. In an 8 inch by 8-inch glass pan, add olive oil, butter, onion, garlic, chili, turmeric, cilantro, lemon juice, lemon slices and mint. Mix well and place into oven for 5 minutes. Remove pan from oven add water and mix well. Add meatballs into sauce. Return to oven cook 15 minutes, rotating kofta half way through with a spoon. Serve kofta with sauce.

Yields: 4 servings

This recipe turned out very well mashaAllah. I doubled the quantity and cooked 3/4 of the kofta and froze the rest to use as a side-dish inshaAllah. It also took longer to cook because of the extra quantity.
I also added a little salt to the sauce.
partly-cooked before turning the kofta:
Lemon-Cilantro kofta Lemon_10

cooked:
Lemon-Cilantro kofta Lemon_11

I served it with white rice and tomato & cucumber salad.

If I had plenty of yoghourt I would have made Tsatsiki (cucumber & yoghourt salad) and maybe even the Turkish yoghourt soup posted by um-zakaria.
A refreshing change to my usual cooking alhamdulilah.

InshaAllah I will let you know when I have used the ones i froze. Wink
I think they would be fine in any case - I would use them within a month as I find that most things frozen gets a 'freezer' taste after some time which is why I don't freeze many cooked meals.
But this is a fantastic dish mashaAllah tabaarakAllah 8)

I have just eaten this dish after following the instructions to your recipe. I think I may have put in too much lemon, but it was the most delicious and most aromatic dish of koftas I have ever eaten. My family loved it!

Great job sis wow and thanks so much for sharing with us I love kufta with a lot of spices and flavour. My husband like its more plain I always put spices in my own though when I make it.
