Basbousa (dessert/cake) - New Pics added!
Basbousa
Ingredients:
2 cups semolina
1 cup dessicated coconut
3/4 cup sugar
1 large spoonful butter melted OR 1/4 cup oil
2-3 teaspoons baking powder
vanilla
1 egg
2 tins sterilised cream ( such as Puck ) or if you prefer 2 x 120 ml pots of plain yogurt
nuts to decorate.
Syrup for pouring over basbousa AFTER cooking :
2 cups sugar
2 cups water (1.5 cups of both sugar and water is also sufficient)
squeeze of lemon juice
orange blossom water / rosewater 1 or 2 tablespoons.
(Boil the syrup ingredients until desired thickness of syrup is reached.)
Preparation:
Mix all ingredients together ( I like to mix the dry ingredients together first ), then pour or spoon into greased tin. Mark into squares or diamond shapes and place a nut into each shape.
Temp. 170 - 180 moderate oven until golden brown (approx 20 - 30 mins).
Pour over syrup & allow to cool before removing from tin.

I made this today and took some pics which you can see in my recipe posted above 8)
Today I used yogurt (2 x 120ml pots) instead of 2 tins of heavy cream. I also found that 1.5 cups of syrup was plenty. Perhaps slightly healthier than the heavy cream version though still high in sugar of course.

What's the sie on the tin you used? Did you use fine or coarse semolina?
I'll guess this is something for my hubby in Ramadan

It came out great mashallah, my family loved it, im going to start making it in ramadan inshallah

Sorry Umm Mussab - I did not notice your query until now.
Regarding the size of the baking tin i usually use this size:What's the size on the tin you used? Did you use fine or coarse semolina.
11 x 7 x1.1/2 inch baking tin = 28cm x 18cm x 4cm baking tin
You can use a smaller tin if you want the basbousa to be thicker and more spongey. The tin I used in the pic is actually a Lasagne tin
Regarding the quality of the semolina then finer may be better though I don't usually consider that.

ok, I've just taken out my first basbousa from the oven... I'm not happy with the result... maybe 'cause it was a glass tin... and graised with oil??? I'll taste it and let u know insha'Allah
